Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, toss vegetables with olive oil, Italian seasoning, salt, and pepper. Spread on a baking sheet.
  3. Roast vegetables for 25 to 30 minutes, stirring halfway, until golden-brown and fork-tender.
  4. Rinse quinoa under cold water. In a medium saucepan, combine rinsed quinoa with 2 cups of water or vegetable broth. Bring to a boil, then cover and simmer for 15 minutes until liquid is absorbed. Let cool slightly.
  5. Combine cooked quinoa with roasted veggies, feta cheese, parsley, and lemon juice.
  6. Toss gently, adjust seasoning, and serve warm or chilled.
