  • 4 ounces Goat Cheese Swap with cream cheese for a milder flavor.
  • 2 tablespoons Jarred Pesto Use pesto mayo as a substitute.
  • 4 slices Cooked Bacon Turkey or vegan bacon can be used as alternatives.
  • 1 cup Lettuce Bibb lettuce is preferred.
  • 4 slices Toasted Multigrain Bread Other hearty breads can also work.

Method
 

Preparation
  1. Preheat your oven to 400°F (approximately 200°C).
  2. Toss the cherry tomatoes with olive oil, salt, and pepper until evenly coated. Spread in a single layer on a baking sheet.
  3. Roast the tomatoes for 20 minutes until soft and lightly brown.
  4. Combine goat cheese and jarred pesto in a bowl and blend until smooth.
  5. Toast the multigrain bread slices until golden brown, about 3-4 minutes.
  6. Assemble the sandwich by spreading goat cheese on one slice, adding bacon, roasted tomatoes, and lettuce.
  7. Top with a second slice of toasted bread, cut in half, and serve immediately.
