Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Combine all-purpose flour, granulated sugar, and softened butter in a bowl. Mix until crumbly. Press into the bottom of the baking dish.
  3. Bake the crust for 10 to 12 minutes until light golden brown. Allow to cool slightly.
  4. In a clean bowl, beat the softened cream cheese, sugar, and vanilla until smooth. Spread over the cooled crust.
  5. Toss diced rhubarb with sugar and flour, then distribute evenly over the cream cheese layer.
  6. Mix oats, brown sugar, and melted butter until clumpy. Sprinkle over the rhubarb.
  7. Bake for 35 to 40 minutes until topping is golden and firm. Let cool completely before slicing.
