Preparation
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Combine all-purpose flour, granulated sugar, and softened butter in a bowl. Mix until crumbly. Press into the bottom of the baking dish.
- Bake the crust for 10 to 12 minutes until light golden brown. Allow to cool slightly.
- In a clean bowl, beat the softened cream cheese, sugar, and vanilla until smooth. Spread over the cooled crust.
- Toss diced rhubarb with sugar and flour, then distribute evenly over the cream cheese layer.
- Mix oats, brown sugar, and melted butter until clumpy. Sprinkle over the rhubarb.
- Bake for 35 to 40 minutes until topping is golden and firm. Let cool completely before slicing.
