Method
- Combine rhubarb, sugar, lemon juice, and water in a saucepan.
- Simmer over medium heat until rhubarb breaks down and thickens, about 20–25 minutes.
- Blend for a smooth consistency if desired.
- Let cool and transfer to jars for storage
