A tart and tangy spread made from fresh rhubarb. Perfect for toast, pancakes, or swirled into yogurt.

Ingredients
  

  • chopped rhubarb
  • granulated sugar
  • lemon juice
  • water
  • cinnamon optional

Method
 

  1. Combine rhubarb, sugar, lemon juice, and water in a saucepan.
  2. Simmer over medium heat until rhubarb breaks down and thickens, about 20–25 minutes.
  3. Blend for a smooth consistency if desired.
  4. Let cool and transfer to jars for storage

Notes

  • Store in the fridge up to 2 weeks or freeze for longer storage.
