Ingredients
  

  • 4 cups watermelon cubed and seeded
  • 1 cup coconut water
  • 1 tablespoon lime juice freshly squeezed
  • 1 tablespoon honey or agave syrup optional
  • Fresh mint leaves for garnish
  • Ice cubes

Method
 

  1. In a blender, combine the cubed watermelon, coconut water, lime juice, and honey or agave syrup if using. Blend until smooth.
  2. Strain the mixture through a fine mesh sieve into a pitcher to remove any pulp, if desired.
  3. Chill the agua fresca in the refrigerator for at least 30 minutes before serving.
  4. Serve over ice in glasses and garnish with fresh mint leaves.
