Ingredients
  

  • 3 cups watermelon cubed
  • 2 cups apples diced (about 2 medium apples)
  • 1/2 cup cucumber diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh mint leaves chopped
  • 2 tablespoons lime juice
  • 1 tablespoon honey optional
  • Salt and pepper to taste

Method
 

  1. In a large mixing bowl, combine the cubed watermelon, diced apples, diced cucumber, and finely chopped red onion.
  2. Add the chopped mint leaves to the bowl.
  3. In a small bowl, whisk together the lime juice and honey (if using). Pour this dressing over the salad.
  4. Gently toss the salad to combine all the ingredients and coat them with the dressing.
  5. Season with salt and pepper to taste.
  6. For best flavor, let the salad chill in the refrigerator for at least 30 minutes before serving.
