For the Sandwiches
  • 1 large English Cucumber (thinly sliced) Ensure slices are tender and sweet
  • 8 slices Sandwich Bread (crusts removed) Traditional white bread or whole wheat works best

Preparation Steps
  1. In a medium mixing bowl, combine 8 ounces of whipped cream cheese with ¼ cup of sour cream or mayonnaise, and 2 tablespoons of finely chopped dill. Mix thoroughly until smooth and creamy, about 2 minutes.
  2. Lay out 8 slices of soft sandwich bread. Spread the herbed cream cheese mixture onto one side of each slice.
  3. Slice a fresh English cucumber thinly, about 1/8 inch thick. Arrange the cucumber slices on half of the bread slices, overlapping slightly.
  4. Place the remaining slices of bread on top of the cucumber slices, cream cheese side down. Press them together gently.
  5. Using a serrated knife, trim off the crusts from each sandwich.
  6. Cut each sandwich into quarters, arranging them on a serving platter.
