Preparation Steps
- In a medium mixing bowl, combine 8 ounces of whipped cream cheese with ¼ cup of sour cream or mayonnaise, and 2 tablespoons of finely chopped dill. Mix thoroughly until smooth and creamy, about 2 minutes.
- Lay out 8 slices of soft sandwich bread. Spread the herbed cream cheese mixture onto one side of each slice.
- Slice a fresh English cucumber thinly, about 1/8 inch thick. Arrange the cucumber slices on half of the bread slices, overlapping slightly.
- Place the remaining slices of bread on top of the cucumber slices, cream cheese side down. Press them together gently.
- Using a serrated knife, trim off the crusts from each sandwich.
- Cut each sandwich into quarters, arranging them on a serving platter.
