Ingredients
  

Coconut Base
  • 200 g Desiccated Coconut Substitute with shredded coconut if preferred.
  • 397 g Condensed Milk Vegan condensed milk makes a great substitute.
  • 100 g Icing Sugar You can use powdered sugar if icing sugar isn’t available.
  • 80 g Raspberry Jelly Crystals Feel free to swap it for orange jelly crystals for a twist.
Coating
  • 200 g Milk Chocolate Dark chocolate can be used for a richer taste.

Method
 

Preparation Steps
  1. In a large mixing bowl, combine desiccated coconut, condensed milk, icing sugar, and raspberry jelly crystals. Stir well until fully blended.
  2. Prepare a 20cm square tin by lining it with baking paper. Transfer the mixture into the tin, using a spatula to even it out and press firmly.
  3. Place the tin in the freezer for at least 2 hours to firm up.
  4. Melt the chocolate in a heatproof bowl set over simmering water, stirring until smooth.
  5. Remove the coconut mixture from the tin and cut into 16 equal rectangles.
  6. Dip each rectangle into the melted chocolate, ensuring all sides are coated. Place back on parchment to set.
