Ingredients
  

  • Pasta penne, rotini, or bowtie
  • Cherry tomatoes
  • Cucumber
  • Red onion
  • Kalamata olives
  • Feta cheese
  • Fresh parsley
  • Olive oil
  • Red wine vinegar
  • Dijon mustard
  • Garlic
  • Dried oregano
  • Salt and pepper

Method
 

  1. Cook pasta until al dente, drain, and rinse with cold water.
  2. Prepare dressing by whisking olive oil, vinegar, mustard, garlic, oregano, salt, and pepper.
  3. Combine cooked pasta with veggies, olives, and parsley. Toss with dressing and fold in feta cheese.
  4. Chill before serving.
