  • 8 slices of bread white or whole wheat
  • 8 breakfast sausage links
  • 4 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 tablespoon butter for cooking
  • Maple syrup for serving

Method
 

  1. Cook the Sausage – Prepare the breakfast sausage according to package instructions. Set aside to cool slightly.
  2. Prepare the Bread – Remove the crusts from each slice of bread and roll them flat with a rolling pin.
  3. Assemble the Roll-Ups – Place a sausage link at one end of each flattened bread slice and roll it up tightly. Press to seal the edges.
  4. Make the Egg Mixture – In a shallow bowl, whisk together eggs, milk, vanilla extract, and cinnamon until smooth.
  5. Dip and Coat – Heat butter in a skillet over medium heat. Dip each roll-up into the egg mixture, ensuring all sides are coated.
  6. Cook the Roll-Ups – Place the roll-ups seam-side down in the skillet. Cook for 2-3 minutes per side, turning until golden brown on all sides.
