Ingredients
  

  • 3 tablespoons olive oil
  • 2 lbs smoked sausage sliced into bite-sized pieces
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 2 cups chicken broth
  • 1 12 oz can diced tomatoes
  • 1/2 cup heavy cream
  • 1/4 teaspoon black pepper
  • 8 oz dry whole wheat bow tie pasta
  • 2 cups shredded cheddar cheese

Method
 

  1. Heat olive oil in a large skillet over medium heat. Add the sliced smoked sausage and cook until browned, about 5 minutes. Remove and set aside.
  2. In the same skillet, add the chopped onion and sauté until softened, about 3 minutes. Stir in the minced garlic and cook for another 30 seconds.
  3. Pour in the chicken broth and diced tomatoes (including the juices). Stir well to combine.
  4. Add the uncooked pasta, bring to a boil, then reduce the heat to low. Cover and let simmer for 12-15 minutes, or until the pasta is tender.
  5. Stir in the heavy cream and black pepper. Return the cooked sausage to the skillet and mix everything together.
  6. Sprinkle the shredded cheddar cheese over the top, cover, and let it melt for about 2 minutes.
  7. Stir gently to combine, then serve warm. Enjoy!

Notes

  • For extra flavor, add red pepper flakes or a pinch of cayenne pepper.
  • If you prefer a different cheese, try Monterey Jack or Gouda.
  • This dish can be made with gluten-free pasta for a gluten-free option.
  • Leftovers can be stored in the refrigerator for up to 3 days. Add a splash of broth or milk when reheating to maintain creaminess.
