Heat olive oil in a large skillet over medium heat. Add the sliced smoked sausage and cook until browned, about 5 minutes. Remove and set aside.
In the same skillet, add the chopped onion and sauté until softened, about 3 minutes. Stir in the minced garlic and cook for another 30 seconds.
Pour in the chicken broth and diced tomatoes (including the juices). Stir well to combine.
Add the uncooked pasta, bring to a boil, then reduce the heat to low. Cover and let simmer for 12-15 minutes, or until the pasta is tender.
Stir in the heavy cream and black pepper. Return the cooked sausage to the skillet and mix everything together.
Sprinkle the shredded cheddar cheese over the top, cover, and let it melt for about 2 minutes.
