  • ½ cup sugar
  • ¼ cup cornstarch
  • 6 ounces strawberry Jell-O powder
  • 2 pounds fresh strawberries hulled and sliced (about 6 cups)
For the Cheesecake Layer:
  • 16 ounces cream cheese room temperature
  • ½ cup sugar
  • ½ cup sour cream
  • 12 ounces Cool Whip divided
For the Toppings:
  • 3 bananas sliced
  • Additional sliced strawberries
  • Graham cracker crumbs

Method
 

Prepare the Strawberry Layer:
  1. In a medium saucepan, combine water, sugar, and cornstarch. Cook over medium heat, stirring constantly, until the mixture boils and thickens (about 1 minute).
  2. Remove from heat and stir in the strawberry Jell-O powder until dissolved. Allow the mixture to cool for about 10 minutes.
  3. Gently fold in the sliced strawberries and pour the mixture into a 9×13-inch pan.
  4. Chill in the refrigerator for 1 hour or place in the freezer for 30 minutes until set.
Make the Cheesecake Layer:
  1. In a large mixing bowl, beat cream cheese, sugar, and sour cream together until smooth and creamy.
  2. Fold in 1 ½ cups of Cool Whip until fully combined.
  3. Spread the cheesecake mixture evenly over the set strawberry layer.
Add the Banana Layer:
  1. Arrange the banana slices on top of the cheesecake layer in an even layer.
  2. Spread the remaining 3 cups of Cool Whip over the bananas, ensuring they are completely covered to prevent browning.
Chill and Garnish:
  1. Chill the entire dessert for 2-4 hours or until fully set.
  2. Just before serving, garnish with additional sliced strawberries, bananas, and a sprinkle of graham cracker crumbs.
