Prepare the Strawberry Layer:
- In a medium saucepan, combine water, sugar, and cornstarch. Cook over medium heat, stirring constantly, until the mixture boils and thickens (about 1 minute).
- Remove from heat and stir in the strawberry Jell-O powder until dissolved. Allow the mixture to cool for about 10 minutes.
- Gently fold in the sliced strawberries and pour the mixture into a 9×13-inch pan.
- Chill in the refrigerator for 1 hour or place in the freezer for 30 minutes until set.
Make the Cheesecake Layer:
- In a large mixing bowl, beat cream cheese, sugar, and sour cream together until smooth and creamy.
- Fold in 1 ½ cups of Cool Whip until fully combined.
- Spread the cheesecake mixture evenly over the set strawberry layer.
Add the Banana Layer:
- Arrange the banana slices on top of the cheesecake layer in an even layer.
- Spread the remaining 3 cups of Cool Whip over the bananas, ensuring they are completely covered to prevent browning.
Chill and Garnish:
- Chill the entire dessert for 2-4 hours or until fully set.
- Just before serving, garnish with additional sliced strawberries, bananas, and a sprinkle of graham cracker crumbs.
