  • 2 cups Sweet Potatoes Cut into ½-inch cubes.
  • 2 cups Broccoli Or other seasonal veggies.
For the Glaze
  • 2 tablespoons Butter Can substitute with olive oil for dairy-free.
  • 3 cloves Garlic Minced.
  • 1/4 cup Honey Maple syrup can be substituted.
  • 2 tablespoons Low-Sodium Soy Sauce Tamari can be used for gluten-free.
  • 1 tablespoon Apple Cider Vinegar
  • to taste Salt
  • to taste Black Pepper

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine sliced sausage, diced sweet potatoes, and broccoli florets.
  3. In a medium saucepan, melt butter over medium heat, then add minced garlic and sauté for 1-2 minutes.
  4. Stir in honey, soy sauce, apple cider vinegar, salt, and black pepper; simmer for 3-5 minutes until slightly thickened.
  5. Pour the glaze over the sausage and veggies, then toss to coat evenly.
  6. Spread the mixture on the prepared sheet pan and roast for 25 to 30 minutes, stirring halfway through.
  7. Remove from the oven and let cool for a couple of minutes, then serve.
