Preparation Steps
  1. In a large mixing bowl, blend cream cheese, shredded cheddar cheese, minced onion, and salsa until smooth and creamy, about 2-3 minutes.
  2. Scoop the cheese mixture onto plastic wrap and shape it into a pumpkin shape, approximately 5 inches in diameter. Secure and refrigerate for at least 2 hours.
  3. Once chilled, unwrap the cheeseball and place crushed tortilla chips on a plate.
  4. Gently roll the cheeseball in the crushed tortilla chips until evenly coated, pressing lightly to adhere.
  5. Insert the green bell pepper into the top center of the cheeseball to resemble a pumpkin stem.
  6. Transfer to a serving platter and pair with crackers, pretzel chips, or fresh vegetables.
