- In a large mixing bowl, blend cream cheese, shredded cheddar cheese, minced onion, and salsa until smooth and creamy, about 2-3 minutes.
- Scoop the cheese mixture onto plastic wrap and shape it into a pumpkin shape, approximately 5 inches in diameter. Secure and refrigerate for at least 2 hours.
- Once chilled, unwrap the cheeseball and place crushed tortilla chips on a plate.
- Gently roll the cheeseball in the crushed tortilla chips until evenly coated, pressing lightly to adhere.
- Insert the green bell pepper into the top center of the cheeseball to resemble a pumpkin stem.
