Shape the mixture into small balls, about 1 inch in diameter. Insert a lollipop stick or skewer into each ball, pressing gently to secure.
In a shallow bowl, beat the egg. Place the breadcrumbs in another shallow bowl. Dip each potato ball in the beaten egg, then roll it in the breadcrumbs until fully coated.
In a large skillet, heat about 1 inch of vegetable oil over medium heat. Once the oil is hot, carefully add the potato lollipops in batches, frying until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.
