Method
- Preheat oven to 350°F (175°C). Line baking sheets with parchment.
- In a large bowl, cream butter and sugars until light and fluffy.
- Beat in eggs, vanilla, and pudding mix until smooth.
- In another bowl, whisk flour, baking soda, and salt. Add to wet mixture and mix until combined.
- Fold in chocolate chips and pistachios.
- Scoop dough onto prepared sheets, spacing 2 inches apart.
- Bake for 10–12 minutes until edges are lightly golden.
- Cool on baking sheet for 5 minutes before transferring to a wire rack.
Notes
- Use white chocolate chips for a different flavor combo.
- Store cookies in an airtight container to keep them soft.
