  • 2 cups fresh strawberries hulled and sliced
  • 1 cup coconut milk canned or carton
  • 1 cup sparkling water
  • 2 tablespoons honey or maple syrup adjust to taste
  • 1 teaspoon vanilla extract
  • Ice cubes
  • Fresh mint leaves for garnish optional

Method
 

  1. In a blender, combine the sliced strawberries, coconut milk, honey or maple syrup, and vanilla extract. Blend until smooth.
  2. Taste the mixture and adjust sweetness if necessary by adding more honey or maple syrup.
  3. Fill glasses with ice cubes and pour the strawberry coconut mixture over the ice, filling each glass about two-thirds full.
  4. Top each glass with sparkling water, stirring gently to combine.
  5. Garnish with fresh mint leaves if desired and serve immediately.
