Method
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together peanut butter, butter, brown sugar, and granulated sugar until fluffy.
- Beat in eggs and vanilla extract.
- In another bowl, whisk together flour, baking soda, and salt.
- Gradually add dry ingredients to the wet mixture.
- Stir in oats.
- Drop by rounded tablespoon onto prepared sheets.
- Bake for 10–12 minutes until golden around the edges.

- Add chocolate chips for an extra indulgent version.
- Store cookies in an airtight container to keep them soft
