- Start by lining a baking dish or tray with wax paper to prevent sticking.
- In a medium bowl, mix together yogurt, peanut butter, maple syrup (or honey), and vanilla extract until smooth.
- Drop mounds of the mixture onto the prepared pan and insert popsicle sticks, then flatten to form bars.
- Sprinkle peanuts over the tops of each bar and press gently. Freeze for about 2 hours.
- Melt chocolate chips and coconut oil over low heat until smooth.
- Dip each bar in the melted chocolate and return to the pan to set.
- Freeze for an additional 15-20 minutes to set the chocolate coating.
