Step-by-Step Instructions
  1. Start by lining a baking dish or tray with wax paper to prevent sticking.

  3. Drop mounds of the mixture onto the prepared pan and insert popsicle sticks, then flatten to form bars.
  4. Sprinkle peanuts over the tops of each bar and press gently. Freeze for about 2 hours.
  5. Melt chocolate chips and coconut oil over low heat until smooth.
  6. Dip each bar in the melted chocolate and return to the pan to set.
  7. Freeze for an additional 15-20 minutes to set the chocolate coating.
