Preparation
- Melt 2 tablespoons of unsalted butter in a skillet over medium heat. Add 1 cup of fresh corn kernels and sauté for 3–4 minutes until golden and fragrant. Transfer corn to a blender.
- In the blender, combine sautéed corn, 2 cups of diced heirloom tomatoes, 2 ripe peaches, ½ cup of fresh basil, and 2 tablespoons of olive oil. Season with 1 teaspoon of kosher salt and ½ teaspoon of white pepper. Blend until smooth.
- Pour the gazpacho into an airtight container and refrigerate for at least 1 hour to chill.
- Melt another tablespoon of butter in the skillet, add 1 cup of cubed cornbread, and season with a pinch of salt. Toast for 3–4 minutes until golden and crispy.
- Ladle the chilled gazpacho into bowls, top with cornbread croutons, and garnish with chopped chives, basil leaves, and flaky sea salt.
