  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 ½ cups all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • ½ cup red jam such as raspberry or strawberry
  • ½ cup blue jam such as blueberry
  • Sprinkles red, white, and blue for decoration

Method
 

  1. Preheat your oven to 350°F. Line two baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, salt, and baking powder. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheets, spacing them about 2 inches apart.
  6. Using your thumb or the back of a teaspoon, make an indentation in the center of each cookie.
  7. Fill the indentations with red and blue jam, alternating colors for a festive look.
  8. Sprinkle the tops with red, white, and blue sprinkles.
  9. Bake for 12-15 minutes, or until the edges are lightly golden. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
