  • 250 g Cherry Tomatoes Halved; other small varieties work as well.
  • 75 g Baby Spinach Arugula makes a great substitute.
  • 1 Small Red Onion Quartered and finely sliced.
For the Dressing
  • 1/3 cup Oil from Sun-Dried Tomatoes Extra virgin olive oil can be an alternative.
  • 2 tbsp White Wine Vinegar Substitute with apple cider vinegar if desired.
  • 1 Garlic Clove Minced; feel free to skip for a milder taste.
  • 1 tsp Dijon Mustard Use yellow mustard as a replacement.
  • 1 tsp White Sugar Optional; adjust to taste.
  • 3/4 tsp Salt Enhances flavor; adjust as needed.
  • 1/2 tsp Pepper Using freshly ground pepper will enhance flavor.
For the Finishing Touch
  • 100 g Feta Cheese Crumble on top; goat cheese can be a substitute.

Step-by-Step Instructions
  1. Prepare the dressing by combining oil from sun-dried tomatoes, white wine vinegar, minced garlic, Dijon mustard, white sugar, salt, and pepper in a mixing bowl.
  2. Cook spiral pasta in salted water for about 10-12 minutes until al dente, then drain and rinse under cold water.
  3. Combine cooled pasta with baby spinach, shredded cooked chicken, halved cherry tomatoes, and sliced red onion in a large mixing bowl.
  4. Pour the prepared dressing over the salad mixture and toss gently for 1-2 minutes until evenly coated.
  5. Transfer the salad to a serving bowl, let it rest for 10 minutes at room temperature, and then sprinkle with crumbled feta cheese.
  6. For make-ahead, reserve some pasta cooking water to mix with the dressing right before serving.
