- Preheat your oven to 420°F (220°C) and line a baking tray with parchment paper.
- In a mixing bowl, combine softened unsalted butter, olive oil, white wine (if using), kosher salt, black pepper, lemon juice, minced garlic, and chopped parsley. Whisk until smooth.
- Rub half of the seasoning mix generously onto the whole chicken, including under the skin.
- Stuff the chicken cavity with halved lemon, garlic bulb, and fresh herb sprigs. Tie the legs with kitchen string.
- Place the chicken breast-side up on the prepared baking tray and roast for 1 hour and 20 minutes, basting with the reserved seasoning at the 30-minute and 1-hour marks.
- Remove the chicken from the oven and let it rest for about 10 minutes before carving.
