Ingredients
  

For the Crust
  • 1.5 cups Nilla Wafer Cookie Crumbs can substitute with graham cracker crumbs or crushed sugar cones
  • 0.5 cups Unsalted Butter or use salted butter with less added salt
For the Orange Cream Layer
  • 8 ounces Cool Whip or use stabilized whipped cream
  • 1 package Orange Gelatin follow recipe's water measurements
  • 1 cup Boiling Water for dissolving gelatin
  • 0.5 cups Cold Water
For the Cheesecake Layer
  • 8 ounces Cream Cheese or neufchâtel cheese for a lighter option
  • 0.5 cups Powdered Sugar can substitute with coconut sugar
  • 1 teaspoon Orange Extract or use fresh orange juice
For Optional Color Enhancement
  • 1 drop Wilton Gel Food Color optional, skip for natural appearance

Method
 

Prepare the Crust
  1. Line an 8x8-inch baking pan with parchment paper. Melt ½ cup of unsalted butter, and combine with 1 ½ cups of Nilla Wafer cookie crumbs. Press into the pan and freeze for 30 minutes.
Make Orange Gelatin
  1. In a bowl, stir 1 package of orange gelatin into 1 cup of boiling water. Whisk until dissolved, then add ½ cup of cold water and let cool for 10-15 minutes.
Prepare Orange Cream Layer
  1. Beat together 8 ounces of cream cheese, ½ cup of powdered sugar, and 1 teaspoon of orange extract. Mix in cooled gelatin and chill for 1 hour.
Make Cheesecake Layer
  1. In a bowl, beat 8 ounces of cream cheese with ½ cup of powdered sugar and 1 teaspoon of vanilla extract. Fold in 1 cup of Cool Whip and spread over the crust.
Combine Layers
  1. Fold the remaining 2 cups of Cool Whip into the orange cream mixture and spread over the cheesecake layer. Smooth the top for evenness.
Chill
  1. Cover with plastic wrap or foil and refrigerate for at least 6 hours, preferably overnight.

Notes
