Ingredients
  

  • 8 oz pasta of choice
  • 2 cups fresh spinach
  • 1 ½ cups cherry tomatoes halved
  • 3 cloves garlic minced
  • 2 tablespoons olive oil
  • ½ teaspoon red pepper flakes optional
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Method
 

  1. Cook the pasta according to package directions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute.
  3. Add cherry tomatoes and cook for 3–4 minutes until softened.
  4. Stir in spinach and cook until wilted.
  5. Add cooked pasta to the skillet and toss to combine. Season with salt, pepper, and red pepper flakes.
  6. Serve warm with grated Parmesan.

Notes

  • Use whole wheat or gluten-free pasta if preferred.
  • Add grilled chicken or shrimp for extra protein.
