Method
- Cook the pasta according to package directions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute.
- Add cherry tomatoes and cook for 3–4 minutes until softened.
- Stir in spinach and cook until wilted.
- Add cooked pasta to the skillet and toss to combine. Season with salt, pepper, and red pepper flakes.
- Serve warm with grated Parmesan.
Notes
- Use whole wheat or gluten-free pasta if preferred.
- Add grilled chicken or shrimp for extra protein.
