Cooking Steps
  1. Preheat your oven to 400°F (200°C) for an even cook.
  2. Season the chicken with thyme, smoked paprika, garlic powder, and onion powder.
  3. Cook chopped bacon in a large cast iron pot until crispy.
  4. Sear the seasoned chicken pieces in the bacon fat until golden brown.
  5. Sauté sliced onions and chopped cabbage in the remaining fat.
  6. Combine browned chicken and bacon with sautéed vegetables and add halved potatoes.
  7. Cover and roast in the oven for 30-40 minutes until chicken is cooked through and potatoes are tender.
  8. Let the dish rest for a few minutes before serving directly from the pot.
