Method
- Cook penne according to package instructions. Reserve 1/2 cup pasta water.
- In a large skillet, heat olive oil and brown sausage until cooked through.
- Add garlic and red pepper flakes, cook 1 minute. Stir in marinara and cream. Simmer 5 minutes.
- Add spinach and stir until wilted. Toss in cooked pasta and reserved water if needed.
- Top with Parmesan and serve hot.
Notes
- Use turkey sausage for a lighter option
- Adjust spice level by reducing red pepper flakes
- Great as a next-day lunch
