  • 1 teaspoon Paprika
  • 1/2 teaspoon Ground Coriander Optional.
Main Ingredients
  • 1 head Green Cabbage Chopped.
  • 1 can Fire-Roasted Tomatoes 28 ounces.
  • 1 small Zucchini Halved and sliced.
  • 4 cups Chicken or Vegetable Broth
  • 2 tablespoons Red or White Wine Vinegar Lemon juice can be used.
  • 1/4 cup Chopped Fresh Parsley For garnish.

Cooking Steps
  1. In a large pot, pour in olive oil and heat over medium-high for about 2 minutes.
  2. Add diced onion, chopped carrots, and diced celery. Sprinkle in salt and pepper, sauté for 5 minutes until soft.
  3. Introduce minced garlic, thyme, oregano, cumin, paprika, and coriander. Cook for another minute.
  4. Stir in chopped green cabbage, cover the pot, and let cook for about 3 minutes.
  5. Combine fire-roasted tomatoes, sliced zucchini, and broth, adjust seasoning, and simmer together.
  6. Increase heat to high until boiling, then reduce to medium-low and simmer uncovered for 20-25 minutes.
  7. Stir in vinegar, taste, and serve hot, garnished with fresh parsley.
