Ingredients
  

  • 4 boneless skinless chicken breasts
  • ½ cup roasted red peppers chopped
  • 1 cup fresh spinach chopped
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Method
 

  1. Preheat the Oven: Set the oven to 375°F (190°C).
  2. Prepare the Chicken: Slice a pocket into each chicken breast, being careful not to cut all the way through. Season both sides with garlic powder, paprika, salt, and pepper.
  3. Make the Filling: In a bowl, mix the roasted red peppers, spinach, and mozzarella cheese until combined.
  4. Stuff the Chicken: Evenly divide the filling between the chicken breasts, securing with toothpicks if needed.
  5. Sear the Chicken: Heat olive oil in a skillet over medium heat. Sear the stuffed chicken for 2-3 minutes per side until golden brown.
  6. Bake to Perfection: Transfer the chicken to a baking dish and bake for 20-25 minutes, or until the internal temperature reaches 165°F (75°C).
  7. Rest and Serve: Let the chicken rest for 5 minutes before serving. Enjoy warm!
