Ingredients

  • 2 cups cooked spaghetti
  • 1 pound boneless skinless chicken breasts, diced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup barbecue sauce
  • 1 cup shredded Monterey Jack cheese
  • 1 cup diced tomatoes fresh or canned
  • ½ cup chopped green onions
  • ½ cup sliced black olives optional

Method

  1. Preheat your oven to 350°F (175°C).

  3. In a large mixing bowl, combine the cooked spaghetti, cooked chicken, barbecue sauce, diced tomatoes, and half of the green onions. Mix well to combine all ingredients.
  4. Transfer the mixture to a greased 9x13 inch baking dish. Sprinkle the shredded Monterey Jack cheese evenly over the top.
  5. If using, scatter the sliced black olives over the cheese.
  6. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven and let it cool for a few minutes before serving. Garnish with the remaining green onions.
