- Begin by selecting a ripe watermelon and cut it in half. Scoop out the flesh, remove seeds, and slice into uniform cubes or wedges.
- In a separate bowl, muddle fresh mint leaves with lime juice for about 30 seconds. If desired, add sugar to enhance sweetness.
- Pour the mojito mixture over the watermelon and gently toss to coat without mushing.
- Transfer to the refrigerator and chill for at least 15 minutes to meld flavors.
- Before serving, drizzle rum over the chilled Mojito Watermelon, if using. Serve in bowls or glasses.
