Preparation
  1. Begin by selecting a ripe watermelon and cut it in half. Scoop out the flesh, remove seeds, and slice into uniform cubes or wedges.
  2. In a separate bowl, muddle fresh mint leaves with lime juice for about 30 seconds. If desired, add sugar to enhance sweetness.
  3. Pour the mojito mixture over the watermelon and gently toss to coat without mushing.
  4. Transfer to the refrigerator and chill for at least 15 minutes to meld flavors.
  5. Before serving, drizzle rum over the chilled Mojito Watermelon, if using. Serve in bowls or glasses.
