Step-by-Step Instructions for Moist Chocolate Zucchini Muffins
  1. Preheat your oven to 375°F (190°C) and prepare a muffin tin with liners or grease it lightly.
  2. Grate the zucchini and squeeze out any excess moisture. Place it in a mixing bowl.
  3. Mix the wet ingredients together: zucchini, eggs, avocado oil, maple syrup, vanilla extract, and applesauce until smooth.
  4. In another bowl, whisk the dry ingredients: flour, cocoa powder, baking soda, baking powder, cinnamon, and salt.
  5. Combine the dry mixture into the wet mixture, stirring until just combined. Fold in the chocolate chips.
  6. Spoon the batter into the muffin tin, filling each liner ¾ full and sprinkling extra chocolate chips on top if desired.
