Mississippi Pot Roast is a zesty twist on traditional roast beef, made with ranch seasoning, au jus, and tangy pepperoncini. It’s rich, flavorful, and practically cooks itself in the slow cooker!

Ingredients
  

  • 3 –4 lb chuck roast
  • 1 packet ranch dressing mix
  • 1 packet au jus gravy mix
  • ½ cup unsalted butter 1 stick
  • 5 –6 pepperoncini peppers
  • ¼ cup juice from the pepperoncini jar

Method
 

  1. Place the roast in the slow cooker.
  2. Sprinkle ranch and au jus seasoning packets over the top.
  3. Add butter on top of the roast, then place pepperoncini and juice around it.
  4. Cover and cook on low for 8 hours or until fork-tender.
  5. Shred and serve with mashed potatoes, rice, or rolls.

  • No additional liquid is needed—trust the process!
  • Leftovers are great for sandwiches the next day.
