Ingredients
  

Tart Shells
  • 1 cup Gluten-Free Flour Use regular flour if not gluten-free
  • 1/4 cup Powdered Sugar
  • 1/2 cup Cold Butter Cut into small cubes
  • 1 large Egg Yolk
  • 2 tablespoons Water Cold
Lemon Curd
  • 1/2 cup Lemon Juice Freshly squeezed
  • 1 tablespoon Lemon Zest
  • 1/2 cup Sugar
  • 3 large Eggs
  • 1/4 cup Butter Unsalted
Lilac Meringue
  • 2 large Egg Whites
  • 1 cup Sugar
  • 1/4 teaspoon Cream of Tartar
  • 1 teaspoon Vanilla
  • 2 drops Violet Food Coloring

Method
 

Tart Shell Preparation
  1. Pulse flour and powdered sugar in a food processor until combined. Add cold butter and blend until coarse crumbs form.
  2. Incorporate egg yolk and water, blending until a dough forms. Wrap and chill for 30 minutes.
  3. Preheat oven to 350°F (175°C). Roll out dough and press into mini tart pans. Bake for 10-12 minutes until golden.
Lemon Curd Preparation
  1. Whisk together lemon juice, zest, sugar, and eggs in a saucepan. Cook while stirring until thickened (8-10 minutes).
  2. Remove from heat and stir in butter until smooth. Let cool and refrigerate for 1 hour.
Lilac Meringue Preparation
  1. Combine egg whites, sugar, and cream of tartar over simmering water, whisking until warm and sugar dissolves.
  2. Beat in stand mixer until stiff peaks form. Fold in vanilla and violet food coloring.
Assemble and Toast
  1. Pipe meringue atop each tart. Use a kitchen torch to lightly toast the meringue until golden.
  2. Garnish with edible lilac petals or dried lavender.
