Step-by-Step Instructions
  1. In a large mixing bowl, whisk together 1 cup of sweetened condensed milk and 1/4 cup of freshly squeezed lemon juice until smooth.
  2. Fold in 1 cup of well-drained crushed pineapple, 3/4 cup of sweetened shredded coconut, and 3/4 cup of chopped pecans.
  3. Add 8 ounces of thawed frozen whipped topping and gently fold until fully combined.
  4. Pour the filling into two pre-made 9-inch graham cracker crusts and smooth the top.
  5. Cover both pies with plastic wrap and refrigerate for at least 2 hours or until set.
  6. Before serving, sprinkle 1/4 cup of shredded coconut and 1/4 cup of chopped pecans on top, and optionally garnish with whipped topping and maraschino cherries.
