Ingredients
  

  • cooked rotini pasta
  • black beans drained and rinsed
  • corn kernels fresh, canned, or frozen
  • cherry tomatoes halved
  • diced red onion
  • diced red bell pepper
  • chopped fresh cilantro
  • crumbled cotija or feta cheese
  • lime juice
  • olive oil
  • taco seasoning
  • salt and pepper to taste

Method
 

  1. Cook pasta according to package directions. Rinse with cold water and drain.
  2. In a large bowl, combine pasta, beans, corn, tomatoes, onion, bell pepper, and cilantro.
  3. In a small bowl, whisk together lime juice, olive oil, taco seasoning, salt, and pepper.
  4. Pour the dressing over the salad and toss to combine.
  5. Top with crumbled cheese before serving.

Notes

  • You can use any short pasta shape.
  • Add diced avocado or jalapeños for extra flavor.
