- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking soda, and salt.
- In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition, then mix in the vanilla extract.
- Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
- Gently fold in the caramel chips and chocolate chips if using.
- Scoop portions of the dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Sprinkle a generous amount of flaky sea salt on top of each dough mound.
- Bake for 10-12 minutes until the edges are golden brown and centers are slightly soft.
- Allow to cool on the baking sheets for about 5 minutes, then transfer to a wire rack to cool completely.
