In a separate shallow dish, mix together the flour, Parmesan cheese, and dried Italian herbs if using.
Remove the chicken from the buttermilk mixture, allowing any excess to drip off, then dredge each piece in the flour mixture, pressing gently to adhere.
In a large oven-safe skillet, melt the butter over medium heat. Once melted and bubbling, add the coated chicken breasts to the skillet. Sear for about 3-4 minutes on each side until golden brown.
Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F.
