Ingredients
  

  • 2 large sweet potatoes about 1.5 pounds
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cherry tomatoes halved
  • 1/2 cup feta cheese crumbled
  • 1/4 cup Kalamata olives pitted and sliced
  • 2 tablespoons fresh parsley chopped
  • Juice of 1 lemon

Method
 

  1. Preheat your oven to 400°F. Line a baking sheet with parchment paper.
  2. Wash and scrub the sweet potatoes, then pierce them several times with a fork. Place them on the prepared baking sheet and bake for 45-60 minutes, or until tender.
  3. While the sweet potatoes are baking, in a small bowl, mix together the olive oil, garlic powder, smoked paprika, oregano, salt, and black pepper.
  4. In a separate bowl, combine the halved cherry tomatoes, feta cheese, Kalamata olives, parsley, and lemon juice. Drizzle with a little olive oil and toss gently to combine.
  5. Once the sweet potatoes are done, remove them from the oven and let them cool for a few minutes. Cut them in half lengthwise and gently fluff the insides with a fork.
  6. Top each sweet potato half with the Mediterranean mixture, dividing it evenly among them. Serve warm.
