Preheat your oven to 400°F. Line a baking sheet with parchment paper.
Wash and scrub the sweet potatoes, then pierce them several times with a fork. Place them on the prepared baking sheet and bake for 45-60 minutes, or until tender.
While the sweet potatoes are baking, in a small bowl, mix together the olive oil, garlic powder, smoked paprika, oregano, salt, and black pepper.
In a separate bowl, combine the halved cherry tomatoes, feta cheese, Kalamata olives, parsley, and lemon juice. Drizzle with a little olive oil and toss gently to combine.
Once the sweet potatoes are done, remove them from the oven and let them cool for a few minutes. Cut them in half lengthwise and gently fluff the insides with a fork.
Top each sweet potato half with the Mediterranean mixture, dividing it evenly among them. Serve warm.
