Ingredients
  

For the Steak
  • 1 pound Sirloin Steak primary protein source
  • 2 tablespoons Olive Oil for marinade
  • 2 cloves Garlic minced
  • 2 tablespoons Lemon Juice from fresh lemons
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
For the Base
  • 2 cups Grains (Brown Rice, Quinoa, Cauliflower Rice) pre-cooked preferred
For the Toppings
  • 1 cup Roasted Chickpeas optional
  • 1 cup Cherry Tomatoes diced
  • 1 cup Cucumber diced
  • 1/2 medium Red Onion sliced
  • 1/2 cup Kalamata Olives or green olives
  • 1/2 cup Feta Cheese omit for dairy-free
  • 1/4 cup Fresh Herbs (Parsley or Dill) chopped
For the Tzatziki
  • 1 cup Greek Yogurt creamy base
  • 1 tablespoon Fresh Dill chopped
  • 1 teaspoon Honey optional

Method
 

Marinating and Cooking
  1. In a medium bowl, combine olive oil, minced garlic, lemon juice, dried oregano, thyme, salt, and pepper. Coat the sirloin steak generously with the marinade. Let it marinate for at least 30 minutes at room temperature or up to 4 hours in the refrigerator.
  2. While the steak marinates, prepare the tzatziki sauce by mixing Greek yogurt, chopped dill, minced garlic, and salt. Cover and refrigerate until serving.
  3. Whisk together olive oil, lemon juice, and honey (if using) in a small bowl to make vinaigrette. Season with salt and pepper to taste.
  4. Heat a skillet over medium-high heat. Add the marinated steak and sear for 4-5 minutes on each side or until desired doneness. Let rest for 5 minutes before slicing thinly against the grain.
  5. Cook chosen grains according to package instructions. If using pre-cooked grains, heat them through.
  6. Assemble the bowl with grains as the base, topped with sliced steak, cherry tomatoes, cucumber, red onion, roasted chickpeas, olives, tzatziki, and vinaigrette.
