Method
- Cook pasta according to package directions. Drain and rinse under cold water.
- In a large bowl, combine the pasta, tomatoes, cucumber, onion, cheese, olives, pepperoncini, and salami.
- Pour Italian dressing over the mixture and toss to coat evenly.
- Season with salt and pepper as needed.
- Chill for at least 30 minutes before serving. Garnish with fresh parsley.
Notes
- Make it vegetarian by omitting salami.
- Use tri-color rotini for a vibrant look.
- Best served cold and can be made up to 2 days ahead.
