Ingredients
  

  • 1 cup orzo pasta
  • 1 cup cherry tomatoes halved
  • 1/2 cucumber diced
  • 1/4 red onion finely chopped
  • 1/4 cup kalamata olives sliced
  • 1/3 cup feta cheese crumbled
  • 2 tablespoons chopped parsley
Lemon Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Method
 

  1. Cook orzo according to package directions. Drain and cool.
  2. In a large bowl, combine orzo, tomatoes, cucumber, onion, olives, feta, and parsley.
  3. Whisk together dressing and pour over salad. Toss to combine and chill before serving.
