  • 1 can 15 oz corn, drained
  • 1 cup cherry tomatoes halved
  • 1 red bell pepper diced
  • 1 cucumber diced
  • 1/2 red onion finely chopped
  • 1/4 cup fresh parsley chopped
  • 1/4 cup feta cheese crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lime juice
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Method
 

  1. In a large mixing bowl, combine the black beans, corn, cherry tomatoes, red bell pepper, cucumber, red onion, parsley, and feta cheese.
  2. In a separate small bowl, whisk together the olive oil, red wine vinegar, lime juice, garlic powder, cumin, salt, and pepper until well combined.
  3. Pour the dressing over the bean and vegetable mixture and gently toss to coat all ingredients evenly.
  4. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
  5. Serve chilled or at room temperature as a dip with tortilla chips or as a side salad.
