Step-by-Step Instructions
  1. Start by patting the chicken thighs dry with paper towels, then cut them into thin slices or cubes.
  2. In a bowl, marinate the chicken with olive oil, salt, black pepper, and cayenne pepper for at least 15 minutes.
  3. Heat a large skillet over medium-high heat and add a drizzle of olive oil. Sear the marinated chicken for 5–7 minutes on each side.
  4. Lower the heat and sauté sliced red onion for about 5 minutes, then add minced garlic for 1–2 minutes.
  5. Pour in the dry white wine, scraping up brown bits. Simmer for 3–4 minutes.
