Step‑by‑Step Instructions
  1. Preheat your oven to 425°F (220°C).
  2. Marinate the chicken by combining maple syrup, Dijon mustard, minced garlic, salt, and pepper in a bowl. Coat the chicken and let it marinate for at least 20 minutes.
  3. Wash, peel, and chop the sweet potatoes into even cubes. Toss them with olive oil, salt, and pepper.
  4. Arrange the marinated chicken thighs on a baking sheet and surround them with sweet potato cubes.
  5. Roast in the oven for 30 minutes, flipping the chicken halfway to ensure even cooking.
  6. Check for doneness with a meat thermometer, it should read at least 165°F (74°C). Let it rest for a few minutes before serving.
