Step-by-Step Instructions
  1. In a large mixing bowl, combine all-purpose flour, yogurt powder, and sugar until well mixed. Gradually add in milk and knead the mixture until it forms a soft, pliable dough. If the dough feels too sticky, sprinkle a little more flour.
  2. In two separate bowls, add freeze-dried mango powder to one portion and steeped saffron to the other, mixing until combined. The first portion remains plain for the white base.
  3. Take small, equal portions from each colored dough and combine them into balls. Aim for a fun three-color swirl resembling a peace sign.
  4. Gently flatten each cookie dough ball into discs about half an inch thick; roll the edges in sugar for a sweet finish.
  5. Preheat your oven to 350°F (175°C). Once preheated, bake the cookies for 14-15 minutes, keeping an eye on them.
  6. After the initial baking, gently tap the baking tray on the counter to help flatten the cookies slightly. Sprinkle the finely chopped pistachios on top.
