- In a large mixing bowl, combine all-purpose flour, yogurt powder, and sugar until well mixed. Gradually add in milk and knead the mixture until it forms a soft, pliable dough. If the dough feels too sticky, sprinkle a little more flour.
- In two separate bowls, add freeze-dried mango powder to one portion and steeped saffron to the other, mixing until combined. The first portion remains plain for the white base.
- Take small, equal portions from each colored dough and combine them into balls. Aim for a fun three-color swirl resembling a peace sign.
- Gently flatten each cookie dough ball into discs about half an inch thick; roll the edges in sugar for a sweet finish.
- Preheat your oven to 350°F (175°C). Once preheated, bake the cookies for 14-15 minutes, keeping an eye on them.
- After the initial baking, gently tap the baking tray on the counter to help flatten the cookies slightly. Sprinkle the finely chopped pistachios on top.
