Ingredients
  

  • 1 pound ground beef
  • 1 1-ounce package taco seasoning
  • 1 10-ounce can diced tomatoes with green chilies, drained
  • 2 cups shredded cheddar cheese
  • 1 16.3-ounce can large refrigerated biscuits

Method
 

  1. Preheat the oven to 375°F (190°C). Grease a muffin tin.
  2. In a skillet over medium heat, cook the ground beef until fully browned. Drain any excess grease.
  3. Add the taco seasoning and diced tomatoes with green chilies to the skillet. Stir to combine and let simmer for 2-3 minutes.
  4. Flatten each biscuit into a 4-inch circle and press into the muffin tin cups, forming a cup shape.
  5. Spoon the beef mixture evenly into each biscuit cup.
  6. Sprinkle shredded cheddar cheese on top of the meat filling.
  7. Bake for 10-12 minutes, or until the biscuits are golden brown and the cheese is melted.
  8. Let cool for a few minutes before serving.

  • For extra spice, add chopped jalapeños or a dash of hot sauce.
  • Use ground turkey or chicken as a leaner alternative to beef.
  • These cups can be made ahead of time and reheated in the oven or air fryer for the best texture.
