In a skillet over medium heat, cook the ground beef until fully browned. Drain any excess grease.
Add the taco seasoning and diced tomatoes with green chilies to the skillet. Stir to combine and let simmer for 2-3 minutes.
Flatten each biscuit into a 4-inch circle and press into the muffin tin cups, forming a cup shape.
Spoon the beef mixture evenly into each biscuit cup.
Sprinkle shredded cheddar cheese on top of the meat filling.
Bake for 10-12 minutes, or until the biscuits are golden brown and the cheese is melted.
Let cool for a few minutes before serving.
