  • 2-3 tablespoons avocado oil divided
  • 1 teaspoon sea salt
  • 1 tablespoon curry powder
  • ½ teaspoon maple syrup optional

Method
 

  1. Preheat Oven: Set the oven to 450°F (232°C).
  2. Prepare Cauliflower: Remove the core and cut cauliflower into even florets.
  3. Season the Florets: In a large bowl, toss cauliflower with 1 tablespoon avocado oil, sea salt, curry powder, and maple syrup until evenly coated.
  4. Sear in a Skillet: Heat remaining avocado oil in a large oven-safe skillet over medium-high heat. Add cauliflower in a single layer and sear for about 5 minutes, flipping occasionally, until golden brown.
  5. Roast to Perfection: Transfer the skillet to the preheated oven and roast for 10-15 minutes, stirring every 5 minutes until crispy and tender.
  6. Serve and Enjoy: Remove from oven, garnish with fresh cilantro or toasted almonds, and serve immediately.

Notes

  • For extra crispiness, broil for the last 2-3 minutes.
  • Use cornstarch for a light coating to achieve an even crunchier texture.
