  • 1 cup Sour Cream or Greek yogurt

Step‑by‑Step Instructions
  1. Preheat your oven to 425°F (220°C).

  5. Incorporate diced red onion, chili powder, and cumin into the meat. Cook for an additional 3–4 minutes.
  6. Add black beans and corn to the skillet and heat through for 3–4 minutes.
  7. Layer the crispy potatoes in serving bowls, then add the savory meat mixture on top.
  8. Top with shredded cheddar cheese, cherry tomatoes, avocado, and cilantro. Serve with lime wedges and sour cream on the side.
