Preheat your oven to 400°F.
Scrub the potatoes clean and poke several holes in each with a fork.
Bake the potatoes directly on the oven rack for 45-60 minutes, or until tender when pierced with a fork.
While the potatoes are baking, heat the olive oil in a skillet over medium-high heat.
Season the steak pieces with garlic powder, onion powder, salt, and pepper.
Add the steak to the skillet and cook for about 5-7 minutes, or until browned and cooked to your desired doneness. Remove from heat and set aside.
Once the potatoes are done, carefully remove them from the oven and let them cool for a few minutes.
Cut a slit down the center of each potato and gently squeeze the ends to open them up. Fluff the insides with a fork.
Top each potato with cooked steak pieces, shredded cheddar cheese, sour cream, chopped green onions, and crumbled bacon.
Serve immediately.
